How to Make Jodie’s Favorite Rice Krispie Squares
Ingredients:
- 9 cups Rice Krispies cereal (or any other crispy rice cereal)
- 1 package fresh marshmallows (or approximately 5 cups of mini marshmallows)
- 1 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup heavy whipping cream
- 2 tbsp Karo Light Corn Syrup
- 1- 2 tsp pure vanilla extract
- Caramel sauce (I used Torani) – optional
- Salt for sprinkling – optional
Instructions:
- First, spray or grease a 9 X 12 pan and set it aside.
- Next, in a large saucepan or dutch oven, melt your butter.
- Then, stir in the brown sugar, vanilla, and heavy whipping cream to make your thick and creamy caramel sauce.
- Let these ingredients bubble together on medium-low heat (medium heat if you are stirring it) until they are golden brown, about 6 minutes.
- Then, add your marshmallows and stir until they are melted.
- Add your cereal and stir with a wooden spoon until it is well-coated in the caramel mixture.
- Next, scrape the mixture out of the pot and into your prepared baking dish.
- Finally, using a piece of parchment paper, press it down into the pan until it is spread out in an even layer.
- Allow to set at room temperature before cutting into squares.
- You’re done! Unless you want to go the extra mile. In that case, drizzle your cut squares with your caramel sauce and sprinkle with a pinch of salt.
If you have leftovers (which is doubtful), transfer your crispy treats to an air-tight container and store them for a few days.

FAQ:
How do you keep your Rice Krispies squares from sticking to the pan?
I’ve been successful at keeping them from sticking to the pan by greasing it well. However, if you’re concerned, you can also line it with parchment paper (not wax paper!).
Help! My marshmallow treats mixture is sticking to my spoon!
No problem! You can stop this from happening by greasing your spoon or spatula beforehand.
What’s the best way to cut a homemade Rice Krispie treat?
Most importantly, let your Rice Krispie treats set properly for the best results. Resist the temptation to cut them too early! Grease your knife if you are at all concerned your treats might stick to it, giving you cleaner cuts.
Additionally, the firmer your bars the easier they will be to cut, so you can also put them in the refrigerator to cool them first.
Can I add chocolate chips to Rice Krispies treats?
Of course! You can add even more flavors to these classic treats, such as:
- Chocolate chips
- Butterscotch chips
- Peanut butter chips
- m&ms
I recommend folding in any chips you add after removing the mixture from the heat.
