Ingredients
Creamy Chicken & Wild Rice
- 1½ lbs boneless skinless chicken breasts
- 1 cup uncooked wild rice blend
- 1 small yellow onion diced
- 2 carrots diced
- 2 celery stalks diced
- 3 cloves garlic minced
- 4 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried parsley
- ½ tsp salt
- ½ tsp black pepper
- ¾ cup heavy cream
- 2 tbsp butter
Maple Glazed Carrots
- 1½ lbs carrots peeled and sliced
- 3 tbsp pure maple syrup
- 2 tbsp melted butter
- 1 tbsp brown sugar
- ½ tsp cinnamon
- ¼ tsp salt
- Optional: fresh thyme or parsley for serving
Instructions
Creamy Chicken & Wild Rice
- Add chicken, wild rice, onion, carrots, celery, garlic, chicken broth, thyme, parsley, salt and pepper to one side of the dual slow cooker.
- Cover and cook on LOW for 5–6 hours or HIGH for 3–4 hours, until the chicken is cooked through and the rice is tender.
- Remove the chicken, shred with two forks and return it to the slow cooker.
- Stir in the heavy cream and butter. Cover and cook for another 15–20 minutes, until creamy and warmed through.
Maple Glazed Carrots
- Add the carrots to the second side of the dual slow cooker.
- Pour the maple syrup and melted butter over the carrots. Add brown sugar, cinnamon and salt, then toss to coat.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until tender.
- Stir well before serving, spooning the maple glaze from the bottom over the carrots. Garnish with fresh thyme or parsley, if desired.
