Bailey's Chocolate Mouse Salted Caramel Pie

‘Tis the season to treat yourself (and your friends) to some special delights. Why not try a delicious new recipe? Baileys. Anything with Baileys, right? Salted Caramel. Yes. Combined together with chocolate mouse? Are you kidding me? Yes, yes and triple yes. How can you go wrong?

This holiday recipe is so good, and when I say “good” I don’t mean the kind of good that is going to help my diet, but good in the spirit of the season. My motto during Christmas goes something like, Eat now and diet later. However, check back in January and I’ll be posting about how to lose those extra Christmas pounds. So, this dessert is rich and decadent, yet its texture is light and smooth and totally melts in your mouth. A little goes a long way to wonderful satisfaction. Do not make the mistake I made the first night. I loved the taste of the salt and underestimated the power of these course granules. I couldn’t eat it because I had made it too salty. Otherwise, it’s easy to make and a huge hit with everyone who tried it.

The taste of Bailey’s does carry through. My youngest son ate it, enjoyed it, and didn’t think anything of it. However, my more sensitive son smelled it and didn’t even want to try it. Obviously, it’s more of an adult dessert but not exclusively. Therefore, just just gauge your audience. Enjoy.

Bailey’s Chocolate Mouse Salted Caramel Pie

Prep Time: 15 min

Cook Time: 5 min (to melt the chocolate)

Total time: 20 min

Ingredients

  • 9 ounces semi-sweet chocolate chips
  • 1 1/2 cup whipping cream
  • 1 1/2 tablespoon sugar
  • 3 fluid ounces (6 tablespoons) Bailey’s – you can use regular or choose a special flavor like caramel or mint.
  • 1 Chocolate cookie pie crust
    • 1 1/2 cups chocolate cookie crumbs and 6 tablespoons melted butter combined and pressed into a 8 or 9 inch pie plate. Chill until firm.
  • Coarse salt for sprinkling
  • Optional for garnishing: shaved chocolate or caramel sauce for drizzling (like we did!)

Instructions

    1. First, prepare chocolate cookie crumb crust. Refrigerate.
    2. Next, melt chocolate chips according to package directions, set aside.
    3. Next, whip cream and sugar together until soft peaks form.
    4. Gradually add Baileys.
    5. Then gently mix in melted chocolate.
    6. Finally, evenly pour mixture into pie crust and top with a sprinkling of coarse salt. Be careful, a little goes a long way, lesson learned.
    7. Refrigerate for 4-6 hours, or until set.

      Hi Pat, Bailey’s is a special brand of flavored liquor. (so yes, alcoholic) It ends up being very little, just a bit of flavor. However, the pie can totally be made without out it.
