Authentic Swiss Crepes Recipe

Ingredients:

  • 2 1/4 cups flour
  • pinch of salt
  • 9 tablespoons sugar
  • 6 eggs
  • 2 tablespoons unsalted butter (melted and cooled)
  • 3 cups milk
  • 3 tablespoons rum (optional)

Directions:

  1. Sift together flour, salt and sugar.
  2. Beat eggs and stir in melted butter, milk and rum using an electric mixer.
  3. Finally, stir in flour mixture. Mix with electric mixer until all lumps are out and batter is smooth.
  4. Allow batter to rest a few minutes before pouring onto pan to cook. Chilling the batter in the fridge for 30-60 minutes or even overnight is a great idea.
  5. Heat your crepe pan up to medium heat. If you don’t have a crepe pan an 8″ skillet will do the trick.
  6. Grease generously with unsalted butter. Be sure to grease again for each crepe to give them beautiful crispy edges. 
  7. Pour a thin layer onto your pan.
  8. To help spread your batter thinly and evenly to all sides of the pan you can either twirl the pan or use a crepe spreader.
  9. Flip using a crepe spatula or regular spatula and cook the other side.
  10. Serve with toppings of your choice.

Ingredients

  • cup flour sifted
  • pinch salt
  • 9 tablespoons sugar
  • 6 eggs
  • 2 tablespoons butter unsalted, cooled
  • 3 cups milk
  • 3 tablespoons rum

Instructions

  • Sift flour, salt and sugar together. Set aside.
  • Beat eggs and melted butter. Make sure butter is cooled before adding to eggs.l
  • Mix in flour mixture to eggs and combine until smooth.

  • Serve rolled or folded in quarters with your choice of toppings.

Notes

This recipe is for sweet crepes which are usually served with various toppings. Here are some of our favorites:
  • Jam or fruit preserves
  • Fresh fruit
  • Nutella or melted chocolate
  • Powdered sugar and fresh lemon (a Parisian classic)
  • Whipped cream
  • Mascarpone
You can also create a savory version of this recipe by just removing the sugar and rum and following the same cooking instructions. Ideas for savory toppings include:
  • Cheese:  Gruyere, Emmentaler, Comte, goat cheese, or mozzarella 
  • Meat:  Ham, prosciutto or other thinly sliced cured meats
  • Vegetables:  Sauteed mushroom, onions, spinach, roasted peppers or other seasonal veggies.
To store: Seal in air-tight container and store in the refrigerator for up to 2 days.
To freeze: Stack using wax paper to separate crepes and seal in freezer bags for up to a month. Thaw at room temperature before reheating. 
To reheat:  Reheat individually on a skillet over medium low heat for 10-15 seconds per side. You can also reheat in the oven. Lay crepes on baking sheet in warm oven (250 degrees) for about 10 minutes.

The Story Behind Our Authentic Swiss Crepe Recipe

Jodie and I were given this recipe by our childhood best friend and her family. This amazing family moved to our town from Switzerland when we were in the 4th grade. We became fast friends, and soon were having sleepovers. Of course it was at the sleepovers that we first tasted these amazing crepes. We were soon asking for the recipe. 

We cherish their authentic Swiss crepe recipe as a memento from our many memories together.

What is the difference between a crepe and a pancake?

Isn’t a crepe just a pancake? Nope! The have similar ingredients, but they aren’t the same.

The difference is that a pancake if fluffy and light due to a leavening ingredient such as baking soda or baking powder. Crepes don’t have a leavening ingredient, so they are thin and delicate. 

You will notice the difference in the batter. 

The pancake batter will be thick, while the crepe batter will be runny. Don’t worry. This is normal.

Should my crepe batter have any lumps?

No lumps allowed. Unlike pancake batter that is quite forgiving, crepe batter is not. It’s essential to remove all lumps and create an ultra-smooth batter. Use a hand whisk or electric mixer to make sure all your lumps are out before cooking.

This is where my amazing Kitchen Aid mixer made all the difference. Wow. I’m sold. I should have bought one YEARS ago.

Can I use this recipe to make savory crepes?

Yes. Just remove the sugar and rum and cook per usual.

You can add items like:

  • gruyere cheese,
  • thin ham slices,
  • Prosciutto,
  • other cured meat.
