How to Make Spring M&M Bars
Ingredients
- ¾ cup butter (at room temperature)
- ¾ cup granulated sugar
- ¾ cup light brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ tsp almond extract
- 2 cups white flour
- ½ tsp baking soda
- ½ tsp fine sea salt
- 1 and ¼ cups white chocolate chips, divided
- 3 cups mini marshmallows
- ¾ cup spring-colored M&M’s
- 1-3 tablespoons spring-colored sprinkles
Instructions:
- Preheat the oven to 350 degrees.
- Grease a 9×13-inch baking pan with cooking spray and line it with parchment paper.
- In a large bowl, cream your ¾ cup butter with the 3/4 cup granulated sugar and 3/4 cup light brown sugar. Mix with a hand mixer (or in the bowl of a stand mixer) until the butter is light in color.
- Add in the eggs, 1 tsp vanilla extract, and 1/2 tsp almond extract. Mix until combined.
- In a different large bowl, combine the 2 cups + 2 tbsp white flour, 1/2 teaspoon baking soda, and 1/2 teaspoon salt. Stir.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Add in the 1 cup of white chocolate chips and stir with a wooden spoon until just combined.
- Press the cookie dough into your prepared 9×13-inch pan using your (freshly washed!) fingers.
- Bake the bars for about 20-25 minutes or until the top is no longer shiny and the edges are starting to brown.
- Then, remove from the oven and immediately top with the mini marshmallows.
- Put it back in the oven for 1 minute and 30 seconds.
- Next, gently press the marshmallows down with your wooden spoon or a spatula.
- Spread the last ¼ cup white chocolate chips evenly over the cookie bars.
- Spread the ¾ cup M&M’s evenly over the bars.
- Scatter the sprinkles over the whole thing.
- Let your cookie bars cool completely before serving. Give them at least a couple of hours!

FAQs About m&m Cookie Bars
These cookie bars can be extremely sticky, but if you take the proper precautions, you should have no trouble!
- First, always use parchment paper. The cookies are far more likely to stick to a pan itself than the paper.
- Second, make sure you let the cookies set completely before serving. Let them sit for at least one hour, but it could take up to three. So, leave yourself plenty of time between taking them out of the oven and serving them.
- Third, make sure your knife is sharp! You could even go one step further and use a hot knife to cut them if you are really concerned, they might stick.
How long will M&M bars last?
If your M&M bars do not all get eaten at the first sitting, you can always store the leftover cookie bars in an airtight container or put plastic wrap on your pan to sit on the counter overnight.
These bar cookies are best enjoyed within a 1-2-day window, while the marshmallows are fresh!
Can I use different candy if I cannot find the spring M&M’s?
Of course! You can substitute anything you like for the white chocolate chips and spring M&M’s. Any of your favorite mix-ins will do! These would be delicious with:
- Milk chocolate chips
- Mini chocolate chips
- Plain M&M’s
- Peanut butter M&M’s
- Peanut M&M’s
- Broken-up peanut butter cups
- Any shape and color of sprinkle
There are always ways to cut back on the sugar if you want a slightly less sweet version of this great recipe!
You can leave out the sprinkles, cut down on the number of M&M’s spread on top, or even leave the white chocolate chips out of the cookie dough.
